Only the Fresh survive!
There are certainly signs which show if your sushi is really at it’s peak quality or it’s way past it, and it is time to learn those. The beautiful thing is all you have to do is use your basic senses and know what to look for.
SMELL
Before you dig in, give your sushi a quick sniff test and you’ll be sure it is fresh and healthy. Now once you bring that beautiful dish all the way up towards your nose you should be able to easily feel its clean and mild scent. Experts claim it should possess a mild scent much like melon, or a light ocean breeze or fresh sea air.
If there’s anything like a sour, fishy, ammonia like odour present then you know this sushi is spoiled and you should avoid it at all cost.
LOOK
Take a gooood look at you sushi once it is on your plate and in no time you’ll know if it is made out of fresh ingredients or there’s something fishy going on around here.
Now what you’re looking for is that bright and shiny appearance with a certain glow that indicates its freshness. You should almost be able to see the light through that fresh fish.
If you fish appears to be dull, dry on the outside or has any discoloration you should know it is not fresh and you should not consume it.
TOUCH
Your fingertips can tell you a lot about the freshness of your sushi as well! Just gently press it and it should feel firm and cool, even spring back a bit. If it is mushy that’s no good!
INSPECT THE RICE
It’s not only the fish that has to be at it’s very peek quality. If you want to enjoy delicious and healthy meal then the rice must shine as well. The good sushi rice has to be moist and even a bit sticky but not too much. If your rice is dry, hard to chew or overly sticky – well, it might be old! It definitely shouldn’t have that gummy texture, and the taste has to be neutral. If it tastes like vinegar or has that stale feel about it, it’s just no good¨!
